Red Velvet Kiss Cookies #CakeMixCookies
During the holiday season, I have a ton of baking to do. I make cookies for my family, friends, neighbors and some to donate. I really enjoy baking, but since I do so much of it, I try to find as many shortcuts as possible.
Using boxes of cake mix to make cookies is one of the biggest time savers there is! You can use almost any box mix(I don’t recommend German Chocolate though…we won’t go there.). Then you can add any mix-ins you like or top with sprinkles, candy…the possibilities are endless!
I wanted something nice and festive, so I busted out a box of red velvet cake mix to make these delicious cookies! And let me tell you, they really are delicious! I’ve had 3 already, for um…testing purposes…
- 1 box of your favorite red velvet cake mix
- 1/3 cup of oil
- 1 egg
- 1 Tbs water
- about 24 peppermint kiss candies(unwrapped)
Preheat oven to 350F.
Mix cake mix, oil, egg and water on low speed until well mixed. I used a small cookie scoop to portion out my cookies. They are about the size of a ping pong ball if you don’t have a scoop(or 2 Tbs of dough).
Place them on a parchment lined baking sheet and flatten them down a bit with the bottom of a glass. Bake 11-13 minutes.
As soon as you take the cookies out of the oven, push a candy into the top of the cookie. You don’t want the cookie to cool before doing this or they won’t stick in. If you want the candy to retain most of it’s shape, remove them from the cookie sheet and place them in the fridge to cool.
If you don’t mind them melting down a bit, go ahead and move them straight to a cooling rack. Once the cookies have cooled and the candy has set, enjoy!!
