Making Mini Pancakes for the Freezer
My boys love those mini pancakes from the freezer section at the store. I had found a really great deal a while back and stocked up on them for $0.25 a box! Recently, the only deal on them was the sale price. I just can’t see spending $2 for 20 tiny pancakes especially when they each eat 10 in 1 sitting.
So when my 9 year old informed me our freezers were out of pancakes, I decided to make my own! It was super easy and really inexpensive. I used half a box of complete pancake mix to make about 100 mini pancakes. I also used some fresh maple syrup my parents made, to put the maple flavor right in the pancakes.
Here’s what I did:
Mix together 4 cups of your favorite complete pancaked mix(the just add water kind) and 3 cups of water(more or less to your liking). I swapped out 1 cup of water and used 1 cup of maple syrup in its place.
Preheat griddle or pan over medium heat. When the pan is hot, place 1 tablespoon of mix to make mini pancakes all around the pan. I comfortably fit 4 minis in my pan. When bubbles start to form in the center of the pancake and they are golden on the bottom, flip them over for a few more seconds.
Place cooked mini pancakes on a cooling rack to cool. Once they have cooled, transfer the cooling rack to the freezer and freeze completely. Once frozen, pop them into a gallon zip top bag and throw them back in the freezer. That’s it!
Other fun things to add would be sprinkles, chocolate chips, small pieces of bacon…just to name a few! Have fun with it!
It only took me an hour to make all these pancakes and my boys can just grab a few from the freezer as they want them! We do 5 mini pancakes for 30 seconds on high and they come out perfect every time! This is great for summer coming up and those early risers. I know I’m planning to sleep in so I can catch up on some zzz’s before the new baby comes.
This is also going to be great for the next school year when the new baby is here and I’m trying to get 2 kids off in the morning instead of just 1. My 5 year old is going to have quite the adjustment when he starts waking up at 6:30 to be on the bus by 7:30. I think these mini pancakes will help motivate him to get moving!
