Jalapeño Popper Quesadilla Recipe
I had a bunch of jalapeños left from the garden to use up. I didn’t feel like making any more salsa so I started to think what else I could use them for. One of my favorite things is cream cheese jalapeno poppers, but honestly…I didn’t feel like spending that much time on making them. Then I remembered I had a bunch of tortillas that I had couponed. That’s how my Jalapeño Popper Quesadilla Recipe was born!
- 1 package of flour tortillas
- 1-2 finely diced jalapeños
- 1/2 tsp garlic powder
- 1 c shredded cheddar cheese
- 8oz block of cream cheese(softened)
Mix together in a medium bowl jalapeños, garlic powder, cheese and cream cheese. Warm pan over medium heat. When pan is warm, spray with cooking spray to prevent sticking. Place 1 tortilla in the pan and put gobs of the cream cheese mixture all over the tortilla. I used 2 spoons to help me. Place the 2nd tortilla on top and lightly flatten it with the back of a spatula. When the first side is lightly brown, flip it and lightly brown the other side. Remove to a plate, cut into wedges and enjoy!
My family enjoyed my take on jalapeño poppers! Much quicker than the traditional way and just as tasty!
