Fudge Cookie Blondies
I was in the mood for something chocolate, but I didn’t want all chocolate. I also wanted it to be easy because my time was limited to whip something together. I had a bunch of preformed cookie dough in the fridge from a recent coupon trip. I looked at them and thought they would be delicious in a type of chocolate chip cookie dough. But I didn’t feel like getting all complicated and trying to wrap the cookies in cookie dough.
Instead, I thought, I’ll make a chocolate chip cookie brownie. So this is where my blondie comes in. I decided to grab a box of yellow cake mix to make fast blondies. It was a hit with my husband and sons! My hubby was even able to save a few to take to the guys at work the next day. They always love a little treat!
- Enough preformed chocolate, chocolate chip cookie dough to line the bottom of a 9×13 pan
- 1 box of yellow cake mix
- 1/4 c oil
- 1/4 c water
- 1 egg
- 1 c chocolate chips
Preheat oven to 350 degrees. Spray the bottom and sides of a 9×13 pan with cooking spray. Place preformed cookie dough into the bottom of the pan. I tried to keep them spaced evenly, but it didn’t really matter once I placed the blondie dough on top.
Mix yellow cake mix, oil, water, and egg together on medium low speed for about 1 minute. Stir in chocolate chips with a scraper or spoon. Carefully place the blondie dough on top of the preformed cookie dough. Do your best to spread it out evenly. As it bakes, it should fill in most of the cracks.
I baked mine for about 40 minutes, until the toothpick I inserted came out clean. My preformed cookies came with packets of chocolate sauce to drizzle on top. So while it was still warm, I cut the corner of the packet and drizzled it all over. I let it cool completely before diving in. It was hard! But I was able to resist!
Ok, no I wasn’t….I totally grabbed a fork and started digging into it as soon as it wasn’t burning my mouth! It was just what I was looking for my craving!
