Chicken Tortellini Salad
I was at the store the other night looking for some filler for my transaction. When I started down the freezer section, I noticed cheese tortellini were on sale. Perfect! I grabbed 2 bags.
My garden is still full of tomatoes and cucumbers, so this was just the right time for this yummy recipe! We tend to eat enough to get our fill during prime veggie season, so we don’t even want to eat it during winter when the veggies aren’t so….prime.
All you need is:
- 16oz package of frozen cheese tortellini
- 1 pint of grape or cherry tomatoes-halved
- 2 or 3 cooked chicken breasts- cooled and shredded(I had leftover thigh meat from the night before)
- 1 medium cucumber-diced
- 1 c your favorite ranch dressing(which happens to be half of a 16oz bottle)
- 2 garlic cloves-minced
Cook tortellini according to package(when it floats, it’s usually done). Rinse it under cold water to stop the cooking process.
Mix everything together in a large bowl. That’s it!! Enjoy it right away or refrigerate for later. It makes awesome leftovers! My 8 year old son requested some for his lunch tomorrow. Luckily, we did have some leftovers for him. As I was scooping it into a container, my husband asked if that was for his lunch. Ummmm, sorry….
