Cheater Snickers Apple Salad
My husband has been begging me to make him Snickers Apple Salad for a while now. And I mean 4 or 5 months. I really don’t like buying apples when they aren’t in season because they are overpriced and you never know if they will taste good or not. We all know, most times, not.
Now that apple season is here and there are more than plenty delicious apples to go around, I started gathering my ingredients to make it. Apples, check. Cool Whip, check. Snickers, check. Crushed pineapple, check. Dry roasted peanuts, check. Box of instant pudding…..oops! Forgot it!
I am not running to the store for pudding since I was already there today. Time to scan the stockpile and improvise. I had regular cook and serve pudding, but I save those for my fruit salad recipe(and I wasn’t feeling the whole cook and serve part). That’s when I saw my huge pile of couponed pudding cups. That’s it! I’ll use tapioca pudding cups!
Here’s what I had:
- 8 oz Cool Whip-thawed
- 1 bag of fun sized Snickers-chopped
- 4 tapioca pudding cups
- 3 large apples-diced
- 8 oz can of crushed pineapple-drained and lightly squeezed to get excess liquid out
- 1/2 c dry roasted peanuts
In a large bowl, fold together the pudding and Cool Whip. Next add the apples, snickers and crushed pineapple. Mix well.
I like to stir in the peanuts just before serving so they don’t start to soften. Save a few peanuts to sprinkle on top. This cheater version was really good!
