BLT Inspired Pasta Salad
The other day, my husband was craving BLT’s for supper, but wouldn’t you know it…we ran out of bread! So I improvised and threw this together instead of running to the store. It was a hit! My kids gobbled it right up!
- 1 box your choice noodles
- 1lb your choice of bacon
- 2 Roma tomatoes(or your choice of equivalent size)
- 1 medium cucumber
- 2c miracle whip(more or less to taste, this is just a starting point)
Boil noodles according to package, drain and rinse in cold water to stop the cooking process. Dice the cucumber, feel free to peel it if you don’t like the peel. De-seed tomatoes by cutting them in half the long way and running a finger through the ribs, then dice. You don’t have to get all the seeds, just enough to prevent them from making the salad runny. Cook your bacon to desired crispness, crumble it when cooled. I like to chop mine up while partially frozen to make even sized pieces, then cook it and cool on paper towel.
Combine all the ingredients, along with the miracle whip in a large bowl. Serve at room temperature or refrigerate and enjoy!
Perfect for using up those fresh ingredients you might have in your garden or find at the farmers market. And an ideal pass along dish at a BBQ. After having cucumbers in your BLT salad, you may switch what you put on your sandwich. I know I did!
